Perfect Pesto Sauce!

Think you need to add dairy to make a delicious pesto sauce?? Think again!

Perfect Pesto:

Makes 1 cup

– 1 large ripe avocado

– 1 cup basil leaves

– 1⁄4 tsp. lemon juice

– 1 garlic clove, minced

– 1⁄4 cup pine nuts

– 1⁄2 tsp. olive oil

Cut the avocado in half and remove the pit. Scoop out the flesh and place it in a blender/ food processor. Add the basil, garlic and pine nuts. Process for about 2 minutes – scrape the bowl as necessary. It should be the consistency of guacamole. Mix this in with your favourite pasta/ salad/ quinoa or enjoy as a dip!

No dairy pesto? No problem!
